Pumpkin fries

Pumpkin fries. .Rustic homemade desserts, such as sweet potato, macaroon and pumpkin fries should not be forgotten, as they are part of our culinary culture. The version that I expose has the base of the original recipe, adding only a few touches to enhance it, such as the use of lemon and the cooking of the pumpkin with a cinnamon stick.

The pumpkin was born in our Latin American lands, where it was a very precious food by the aborigines before the arrival of the Spanish conquerors, who took it to their kitchen. It is a creeping plant of the Cucurbitaceae family and the pulp with its shell, seeds and even flowers are consumed from it, very popular in the Mexican culinary tradition.

This delicious plate of fries can accompany you as another dish on your table or simply as a dessert after a delicious dinner.

  • teaspoon of baking powder
  • White sugar
  • cinnamon stick
  • neutral flavor vegetable oil
  • Creole lemon (lime in Europe)

Basic recipe


  • 200 g of pumpkin
  • 60 g fine wheat flour
  • 1 teaspoon of baking powder
  • 60 g white sugar
  • 1 cinnamon stick
  • neutral flavor vegetable oil
  • 1 Creole lemon (lime in Europe)


Peel and cook the pumpkin with the cinnamon stick, 20 g of sugar and a piece of lemon peel. Drain the water very well, remove the cinnamon stick and the lemon peel. Make a puree by adding the flour, the remaining sugar (40 g) and the baking powder. Let stand at least 30 minutes for the baking powder to work, providing volume. Fry in abundant oil on both sides and place on absorbent paper before serving. The fries I have served natural, without sugar on top, but everyone can put what they want.
