The eggplant, having vitamins A, C and B complex, in addition to folic acid , strengthens the immune system and improves resistance to various diseases. It also contains phosphorus , calcium , potassium, and magnesium , which prevent arthritis , osteoporosis, and heart disease. It is a food with a high iron content , ideal to prevent anemia.


Eggplant contains antioxidants such as nasunin , an anthocyanin responsible for the purple color of the fruit’s skin. Protects against the oxidation of circulating fats, reduces the risk of cardiovascular disease and slows aging. It has anti-cancer, anti-inflammatory effects and also tends to control diabetes . Some other compounds in eggplant, including gallic acid , may also have a reducing or controlling action on sugar levels in people with type 2 diabetes mellitus and on blood pressure levels in hypertensive patients .

Healing properties

Basic recipe


  • 2 aubergines
  • 200 grams of whole wheat flour or if refined, mixed in equal parts with wheat bran
  • 3 tablespoons of white wine
  • 3 tablespoons of olive oil preferably extra virgin
  • 1 glass of cold skim milk
  • 1 teaspoon of yeast
  • 1 pinch of salt


Chop the aubergines into very thin slices and let them rest for 10 minutes in salted water to remove the bitterness. Make a dough with the wholemeal flour and some salt, make a hole in the middle and pour the wine and olive oil there. Mix well and add the glass of cold skim milk. Keep working the dough and keep it in the refrigerator for an hour. Immediately before preparing the fries, add the teaspoon of yeast to the dough. Once the mixture is done, pass the dried eggplants through the dough and fry them in hot olive oil. If you wish, you can add a drizzle of honey to the fries. Once you try them, these fries will become one of your favorite dishes.
