Basic recipe

Ingredients:

  • 2 aubergines
  • 200 grams of whole wheat flour or if refined, mixed in equal parts with wheat bran
  • 3 tablespoons of white wine
  • 3 tablespoons of olive oil preferably extra virgin
  • 1 glass of cold skim milk
  • 1 teaspoon of yeast
  • 1 pinch of salt

Preparation

Chop the aubergines into very thin slices and let them rest for 10 minutes in salted water to remove the bitterness. Make a dough with the wholemeal flour and some salt, make a hole in the middle and pour the wine and olive oil there. Mix well and add the glass of cold skim milk. Keep working the dough and keep it in the refrigerator for an hour. Immediately before preparing the fries, add the teaspoon of yeast to the dough. Once the mixture is done, pass the dried eggplants through the dough and fry them in hot olive oil. If you wish, you can add a drizzle of honey to the fries. Once you try them, these fries will become one of your favorite dishes.
