Valdeón cheese . Valdeón cheese is a blue cheese that is produced in the province of León , Spain , in the heart of the Picos de Europa in the Valdeón valley. In the past, a similar cheese called “picón de Valdeón” was made that used to be made with milk from local cattle.

It is made with both goat and cow’s milk or with a mixture of both and is left to mature in caves for a long period. It is a cheese with a fairly strong flavor and a high fat content , the paste is slightly yellow and soft in texture. These characteristics make it a good cheese to spread or to make sauces to accompany meat or mushrooms . It is made throughout the year.
Presentation forms
Another form of presentation of this cheese is in the traditional format wrapped in metallic foil of aluminum alloys , since it facilitates its conservation and maintenance of humidity levels , as is common in most blue cheeses . Recent research carried out by the University of León has found the presence of the anticancer andrastine . It is a cheese that is made in a similar way to other cheeses from the Picos de Europa , such as Cabrales de Asturias or Picón de Cantabria cheese .
