Pineapple atol (typical Salvadoran)

Pineapple atol . It is a delicious and very traditional atoll from El Salvador . It is one of many varieties of atoles that exist in the country and is among the tastiest and best accepted by children.

Ingredients

  • 3 pineapple
  • 1/2 panela(sweet tied) or a pound of sugar
  • 4 tablespoons cornstarch.
  • Cinnamon to taste.
  • Fat pepperto taste.
  • 1/2 liter of water.

Preparation

Cut the pineapple into small pieces and put in a deep pot to simmer together with the pepper, the tied or sugar, the cinnamon and half a liter of water. It must be boiled, moving from time to time until it reaches the point of syrup . The pineapple will be almost undone. In ice water, mix and break the cornstarch and add, moving the preparation that you already have, until you achieve the desired consistency. If you want to get more of the pineapple flavor, scoop out a few chunks before it melts and reserve to add to the atoll when serving.
