Today it is known in England under the name of “Swiss musli”, in Milan it is served under the name of “Surprise Dolce”, and in Zurcí it is enough to ask at any hotel or restaurant for “Un Birche”. Of course, unfortunately, what they serve us according to which places is more or less copiously enriched with whipped cream, canned fruit and sugar, and as for the apple, is usually conspicuous by its absence.

In such a case there is no doubt that it lacks all the original virtues. And what about the different “Bircher-Muesli” that are offered packaged in all dietetic houses whose shelves display a series of more than suspicious products, such as powdered milk, dried apples, raisins, walnuts, beet sugar and flakes of oats? The only exception is frozen muesli, provided that it has been prepared very carefully. ”


As a commercially available packaged product in some countries, its ingredients are dried or dehydrated cereals, nuts and fruits, mixed without a rigid recipe, depending on the manufacturer. When making a homemade preparation, “seasonal” products that are fresh in the market are usually used.

Maximilian Oskar Bircher- Benner (Aarau, 22 August as as 1867 – 24 January as as 1939 ) Swiss physician and pioneer in nutritional research. He developed in his Zurich sanatorium a balanced diet of raw vegetables and fruits used as a means of healing patients, contrary to commonly held beliefs in the 19th century .

His best-known invention or discovery is muesli cereal, although his invention differs significantly from today’s muesli, and specifically from the one known in Switzerland as Bircher-Müesli.

Bircher-Benner modified the eating habits of the end of the 19th century. Instead of a lot of meat and white bread, postulating the consumption of fruits, vegetables and nuts. Their ideology not only controlled nutrition, but also a Spartan physical discipline. At his Bircher-Benner-Platz Zurich Sanitarium, patients had to follow a kind of daily monastic routine, which included going to bed early (9:00 p.m., 9:00 p.m.), physical training, and active labor. gardening and horticulture. His theories were based on a harmony between nature and people. Some of his ideas came from daily observation of the life of Swiss shepherds, who lived a simple and healthy life.

Muesli recipes

Muesli (Irish)


  • 50 gr of rye flakes
  • 110 gr of oat flakes
  • 30 gr of raw sunflower seeds
  • 25 gr of chopped raw almonds
  • 3 tablespoons of sunflower oil
  • 3 tablespoons maple syrup (molasses or cane honey)
  • 3 pinches of cinnamon
  • 50 gr of raisins
  • 50 gr of chopped dried apricot (dried apricots)

Muesli bars


  • 450 grams of muesli

  • 5 tablespoons of olive oil
