The Orange and Lemon Jelly is a recipe with medicinal properties, special for children and adults, a dessert to be accompanied with varieties of cheese.

- 1 kg. of lemons
- 2 l. of water
- of sugar
- 4 tablespoons of fresh thyme leaves
Wash the oranges and lemons, under running cold water and with the help of a sharp knife, cut them into not too large pieces, pour them into a saucepan along with the water and put the container on the fire, when the boiling begins, lower the heat and continue cooking, on low heat, for about 1 hour or until the fruit is soft. Then pour everything through a cloth bag, and let it drain for 2 or 3 hours or, better yet, overnight, then measure the juice obtained and pour it into a saucepan, add 500 g of sugar for every 600 ml . of juice and simmer until the sugar dissolves. Turn up the heat and bring to a rapid boil until it acquires the desired consistency. Foam the surface, Add thyme leaves and allow to cool until a thin crust forms on the surface. Finally, give it a turn with a wooden spoon and send it to glass jars previously sterilized, especially for children’s use.
