Elaboration

This cheese is made from cow’s milk from the family’s own farm. The milk is collected freshly milked, whole and with cream, heated in a drum and the rennet is added . During this operation the milk is in permanent movement

features

It is a rectangular, soft cheese, the size of which is around a kilo . The interior or paste is white and the crust is thin, soft and yellow in color. Once curdled, it is cut into small pieces and introduced into rectangular molds. Being in the molds they are moved to favor the loss of whey, once drained they are salted and left to mature.

Production area

This cheese is made in the Llaniscan town of Vidiago by the Collera family .
