Instructions

First cut the chicken into eighths and place it in a saucepan in which you have previously heated the oil. Let it brown well and remove it, to be able to use the same oil when making the sauce. To this oil you add the onion, garlic, parsley, bell pepper and tomato, and place it on the fire, frying everything for a few minutes, until the onion is transparent.

Add the broth along with the previously fried chicken pieces and boil everything for a few minutes until the chicken begins to soften. Then add the dry wine, cumin, pepper, salt, peppers, and asparagus.

Bring everything to a boil for a few moments and add the previously washed rice. When the boil breaks again, cover the pot and lower the heat to a minimum, leaving it to cook for about 30 minutes or until the rice is completely softened.
