Sulfurized paper

Sulfurized paper : Also called parchment or vegetable parchment, it is obtained by subjecting a sheet of good quality paper, for a few seconds to the action of a sulfuric acid bath , which hydrolyzes the cellulose and partially transforms it into amyloid , gelatinous and impermeable matter.

After a full wash and dry, this paper is much stronger than the original paper, it is translucent, impervious to grease and, to a large extent, to water and gases. The heavier and stiffer grades, as well as items obtained by wet laminating two or more sheets of parchment paper, are called parchment paper.

It is a natural product composed exclusively of pure vegetable cellulose. It has as its main characteristic that it is non-stick, resistant to high temperatures (approximately 220º C), it is impermeable to fats, gases, to disintegration in water even in boiling, and it is safe to maintain direct contact with food.

This practical paper resists heat (unlike wax paper) and is practically non-stick (unlike aluminum foil). Can be placed on trays, inside cake pans, and in other baking pans. It is also used as a conservative medium.

Uses of Sulfurized Paper

In the kitchen

The heavier and stiffer grades, as well as items obtained by wet laminating two or more sheets of parchment paper, are called parchment paper. This is used for bookbinding as a substitute for parchment skins, the manufacture of lampshades and travel items.

Cautions

In the use of vegetal paper or sulfurized paper, it should be avoided that it comes into direct contact with heat sources such as resistances or flames. It is not reusable, the support of high temperatures has a limited time, after baking in the oven the paper changes color. It is convenient to discard it.
