Rye, the cereal that comes from Asia
Among the Graminaceae we find rye , a cereal from Asia rediscovered nowadays for its beneficial properties and its multiple uses. We find two varieties: winter the most used and cultivated and the summer one.
It can be consumed in the form of whole grains, hulled or in the form of flour. As with all other flours, we suggest the whole or slightly refined one that keeps its nutritional properties intact.
Nutritional properties of rye
Rye provides an excellent supply of minerals including potassium , zinc, phosphorus, manganese, magnesium , iron; B vitamins, vitamin E and amino acids. It also provides a good supply of fibers beneficial for the balance of the gastrointestinal system. It is an energetic, light and regenerating food. It has a beneficial action on the adrenal glands, fights hypertension, reduces cholesterol in the blood and promotes circulation. It has a low glycemic index and is therefore a food indicated for subjects who suffer from diabetes. It contains little gluten and is low in calories, suitable for those who follow a reduced diet. Thanks to the good presence of vitamin E it has antioxidant properties and promotes purification from heavy metals .

Rye and rye flour in the kitchen
Rye grains
Rye grains are rarely used but are a valid alternative to other cereals such as barley, spelt and buckwheat.
It is necessary to wash it several times until the water is clear and leave it to soak for about 8 hours. It should be cooked in salted water for about an hour. You can add it to soups and broths or season it with sautéed vegetables.

Flour lends itself to the preparation of sweets such as biscuits and tarts, pasta and bread and piadinas for which it is mostly used. We often find black bread made only with rye or mixed with flour from other cereals. Rye-based baked goods such as bread and piadinas are recommended due to their greater digestibility, higher fiber content and energizing properties.

You can also choose to make homemade bread by combining rye flour with other flours and garnishing it with sesame or poppy seeds or even with raisins or dried fruit.
