Potassium sodium tartrate acts as a regulator of acidity and as an antioxidant. It is also used as a stabilizer and emulsifier.

It is mainly used in cheeses and meats, as well as its derivatives.

Sodium and potassium tartrate, can be prepared by adding 0.5 mol of sodium carbonate to the hot solution containing 1 mol potassium bitartrate.
