What are the chief characteristics of good meat ?

It should be firm and elastic to the touch, (b) It should be bright red in colour and marbled in appearance.
(1 c ) It should have a fresh pleasant smell. (d) The fat should be whitish yellow in colour and free from blood
stains, (e) If-a skewer be thrust into it, there should be no unpleasant smell when it is withdrawn.
