- 1 Iguana.
- Sour orangeor lemon .
- Baking soda.
- Garlics.
- Saltand pepper .
- Vinegar.
- Onion.
- Tomato.
- Sauceof tomato .
Preparation
If she’s alive, kill her with a machete to the head . Build a fire and burn it until the leather starts to blister]] s, peel it off. Remove the guts, wash it with sour orange or lemon and baking soda , until it is well cleaned. Crush garlic , put cumin , pepper , salt , vinegar , leave the meat to rest for a while.
Chop the onion , chili , tomato . Cold all with meat, take water and let it cook, put a little sauce of tomatoes or tomato paste. If the iguana has eggs , they have been removed and washed with lemon and put in water.
When the meat is stewed and with enough juice, the eggs are thrown in the pot with meat. Grate coconut and pour a little hot water to release the milk , pour it into the meat with a handful of coconut. Let it cook for a bit and then grate grated semita bread that is hard and curdle the meat.
