How to make a cheesecake without an oven

Ingredients for 12 people:

  • 250 g of ground cookies
  • 130 g unsalted butter
  • 2 tablespoons sugar
  • 2 containers of cream cheese at room temperature
  • 1 1/4 cup condensed milk
  • 1/4 of cup of lemon juice
  • 1 teaspoon vanilla extract

Elaboration:

  1. We started our no-oven cheesecake recipe by preparing the base. To do this, crush the cookies to powderwhile melting the butter in a saucepan over low heat.
  2. Next, add the crushed cookies and sugar to the liquid butter. Stir everything until you get a homogeneous dough and spread it over the cake mold exerting some force so that the base is solid and compact. Put the base in the freezer for 10 minutes, then leave it in the fridge while you prepare the filling.
  3. Now it is the turn to beat the cream cheese with a mixer until you get a smooth and creamy texture. When it’s ready, add the condensed milk, lemon juice, and vanilla extract. Beat again until everything is well mixed.
  4. Take the mold out of the fridge and add the filling on top of the base. Smooth with the help of a spatula and put the cake in the freezer for two hours.
  5. To finish your cheesecake without an oven, take it out of the freezer and, if you want, decorate it with red berries, chocolate or blueberry jam. Put it in the fridge again for half an hour to cool down and you can now enjoy it.
